Getting back to your question though, a 70-200 is absolutely a worthwhile lens to include in your kit, but I would rather take the 24-120 hiking. You just have to accept you're unlikely to get close ups of the elk or ptarmigans. But it will allow you to focus fairly closely on plants and is a great range for landscape.
