If you take the same scene, and shoot it at the same exposure on an 800 and a 400 ISO film, they will look different. The 800 film will record shadow detail that the 400 won't. You can overdevelop the 400 to bring up the contrast, and have reasonable mid-tones, but you're still going to lose shadows.
