The best aperture setting for bird photography could be from f/5.6 to f/8, for optimum sharpness, depending on your maximum aperture of your lens. Your shutter speed could be more than 1/800s at least and 1/1200s for the birds in flight. Keep your hands steady or you can use a monopod/tripod.
